Authentic Turkish Menemen Recipe (Vegetarian & Easy)

A classic Turkish breakfast includes a rich spread of cheeses, olives, fresh vegetables, herbs, börek, and of course, endless glasses of Turkish tea. One of the most beloved warm dishes on the table is Menemen — a simple yet flavorful egg dish cooked with tomatoes and herbs.

Ingredients

  • 4–5 ripe tomatoes
  • 1 bunch spring onions
  • ½ bunch parsley
  • 2–3 basil leaves
  • 2 tablespoons early harvest olive oil
  • 4 eggs
  • Salt and black pepper to taste

How to Make Menemen

  1. Prepare the base: Grate the tomatoes into a purée. Finely chop spring onions, parsley, and basil.
  2. Cook the onions: Heat olive oil in a pan and sauté the spring onions until soft.
  3. Add tomatoes & herbs: Pour in the tomato purée and most of the herbs (reserve a little for garnish). Simmer for about 10 minutes until slightly thickened.
  4. Add the eggs: Lightly whisk the eggs and slowly pour them into the pan. Stir gently to combine with the tomato mixture.
  5. Finish cooking: Cook for another 5 minutes, until the eggs are just set but still soft.

Optional Twist

If you enjoy a bit of heat, add chili flakes while sautéing the onions for a subtle spicy kick.

Serve your Menemen hot, straight from the pan, with:
