Authentic Turkish Menemen Recipe (Vegetarian & Easy)

Ingredients
- 4–5 ripe tomatoes
- 1 bunch spring onions
- ½ bunch parsley
- 2–3 basil leaves
- 2 tablespoons early harvest olive oil
- 4 eggs
- Salt and black pepper to taste
How to Make Menemen
- Prepare the base: Grate the tomatoes into a purée. Finely chop spring onions, parsley, and basil.
- Cook the onions: Heat olive oil in a pan and sauté the spring onions until soft.
- Add tomatoes & herbs: Pour in the tomato purée and most of the herbs (reserve a little for garnish). Simmer for about 10 minutes until slightly thickened.
- Add the eggs: Lightly whisk the eggs and slowly pour them into the pan. Stir gently to combine with the tomato mixture.
- Finish cooking: Cook for another 5 minutes, until the eggs are just set but still soft.
Optional Twist
If you enjoy a bit of heat, add chili flakes while sautéing the onions for a subtle spicy kick.
