Crispy Pan Börek with Soda

Easy Turkish Börek Recipe with Yufka (Filo Pastry)

I've been a bit quiet on the blog lately, but after hosting a recent residential cooking course, I'm back with new recipes to share. This crispy pan börek with soda is one of the highlights — simple, versatile, and absolutely delicious.

This recipe uses traditional Turkish yufka (a type of filo pastry) and is perfect when you want something quick yet impressive.

For the Börek Base

  • 5 sheets of yufka (or approx. 1 kg filo pastry)

For the Filling

  • 250 g ground beef
  • 2 large potatoes (very finely diced)
  • 1 onion (chopped)
  • 1 bunch of parsley (finely chopped)
  • Salt & pepper to taste
  • A pinch of fenugreek
  • ½ cup sparkling water

For the Batter

  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/4 cup olive oil
  • 1 cup milk

How to Make Crispy Börek

  1. Prepare the pan: Grease a baking tray generously with butter.
  2. Layer the base: Place 2–3 sheets of yufka at the bottom, letting edges hang slightly over the sides.
  3. Add the first batter layer: Whisk eggs, milk, and oils together. Pour half of this mixture evenly over the pastry.
  4. Add the filling: Mix ground beef, potatoes, onion, parsley, spices, and fenugreek. Spread evenly over the base.
  5. Top layers: Cover with another 2–3 sheets of yufka. Fold in the edges neatly.
  6. Final touches: Pour the remaining batter over the top. Lightly score the surface with a knife. Pour sparkling water evenly over everything and sprinkle sesame seeds.
  7. Bake: Bake at 180°C (350°F) for about 30 minutes, or until golden brown and crispy.

Tips for the Perfect Börek

  • Sparkling water creates that signature light, crispy texture.
  • Slice before baking for cleaner portions.
  • Let it rest 5–10 minutes after baking for easier serving.

Endless Filling Variations

One of the best things about börek is its flexibility:

  • Cheese + dill + parsley
  • Leftover roasted vegetables
  • Minced meat + spices
  • Spinach + feta

Let what you have at home inspire your own version.

Simple, crispy, and endlessly adaptable — this börek is proof that great food doesn't have to be complicated. Afiyet olsun!
