Crispy Pan Börek with Soda
Easy Turkish Börek Recipe with Yufka (Filo Pastry)
I've been a bit quiet on the blog lately, but after hosting a recent residential cooking course, I'm back with new recipes to share. This crispy pan börek with soda is one of the highlights — simple, versatile, and absolutely delicious.
This recipe uses traditional Turkish yufka (a type of filo pastry) and is perfect when you want something quick yet impressive.
For the Börek Base
- 5 sheets of yufka (or approx. 1 kg filo pastry)
For the Filling
- 250 g ground beef
- 2 large potatoes (very finely diced)
- 1 onion (chopped)
- 1 bunch of parsley (finely chopped)
- Salt & pepper to taste
- A pinch of fenugreek
- ½ cup sparkling water
For the Batter
- 3 eggs
- 1/3 cup vegetable oil
- 1/4 cup olive oil
- 1 cup milk
How to Make Crispy Börek
- Prepare the pan: Grease a baking tray generously with butter.
- Layer the base: Place 2–3 sheets of yufka at the bottom, letting edges hang slightly over the sides.
- Add the first batter layer: Whisk eggs, milk, and oils together. Pour half of this mixture evenly over the pastry.
- Add the filling: Mix ground beef, potatoes, onion, parsley, spices, and fenugreek. Spread evenly over the base.
- Top layers: Cover with another 2–3 sheets of yufka. Fold in the edges neatly.
- Final touches: Pour the remaining batter over the top. Lightly score the surface with a knife. Pour sparkling water evenly over everything and sprinkle sesame seeds.
- Bake: Bake at 180°C (350°F) for about 30 minutes, or until golden brown and crispy.
Tips for the Perfect Börek
- Sparkling water creates that signature light, crispy texture.
- Slice before baking for cleaner portions.
- Let it rest 5–10 minutes after baking for easier serving.
